Holiday Memories: Recipes of Love

A homemade recipe is often made with trial-and-error, a panel of judges, and lots of love. Every favorite becomes a household staple, and if it is passed on, it becomes a delicious, one-of-a-kind heirloom for generations to come.
For the holidays, Memorial Planning would like to share recipes from families and team members at Roselawn Memorial Park in Monona Park, WI. These directions come from years of experience and loved ones who shared meals straight from the heart. As you try these recipes, remember that they may need adjustments – after all, they are from family chefs.

Entrées
Chicken Cacciatore from Grandma Cianci
Prep time: ½ hour
Cook time: 1 ½ hour
Ingredients:
• 1 whole chicken, cut up/quartered
• Flour for dredging (½ cup)
• ⅓ cup of olive oil
• 1 garlic clove, minced
• 1 can of diced tomatoes
• 1 onion, sliced
• 8 oz. sliced mushrooms
• ½ cup of red wine
• 1 green pepper, sliced
• 1 ½ tsp Oregano
• 1 can of black olives
• Salt and pepper to taste
- Cut up chicken, dredge in flour, brown it in a pan of heated oil. Set the chicken aside when browned.
- Add peppers, mushroom, and onions to the pot and sautee until the onions are glazed.
- Add tomatoes with their juice, wine, oregano, salt and pepper, and olives. Mix ingredients well, then add the chicken back to the pot.
- Simmer the dish until the chicken is tender.
- Serve over white rice if desired.
Goat Curry
Any red meat can be used for this recipe. Enjoy with basmati rice or naan.
Prep time: 30 minutes
Cook time: 5+ hours
Ingredients:
• 2-4 green chiles (remove seeds if you prefer milder dishes)
• 2 pounds goat meat
• 2-3 Tbsp curry mix
• 2 Tbsp spoons garlic, minced
• 2 Tbsp spoons ginger, minced
• 2 seeded Roma tomatoes
• 1 cup plain yogurt
• 1 cup chicken broth
• 1 large onion, diced
• Olive oil for sautéing
• Salt to taste
- In a pan, heat olive oil to medium heat. Cook onions, add ginger and garlic, and cook down until the onions are soft.
- Add meat and brown, then add chilis.
- Add curry mix and cook for 3-5 minutes until the mixture browns more; add tomatoes and cook until soft.
- Add the chicken broth and yogurt, then cook on low heat until you feel the sauce is to your desired thickness. Add salt to taste.
Dessert
Rhubarb Crisp
Prep Time: 10-15 minutes
Cook Time: 45 minutes or more
Ingredients:
• 4 cups of rhubarb, cut up
• ½ tsp. of flour
• 2/3 cup of oatmeal
• 1 ½ cup of sugar
• ½ cup of brown sugar
• 1 stick of butter
Directions:
- Place rhubarb in a greased casserole dish. Crumble together remaining ingredients and sprinkle on top.
- Bake at 350° for 45 minutes or more.
Drink
Brandy Slush
For a non-alcoholic alternative, brandy can be replaced with a preferred fruit juice or removed from the recipe.
Prep time: 10 minutes
Cook time: 10 minutes
Freeze time: 8 hours
Ingredients:
• 4 (2-gram) bags of green tea
• 5 cups boiling water
• 1 cup white sugar
• 2 cups brandy
• 12 oz. of frozen lemonade
• 1 can of frozen orange juice concentrate
• 2-liter bottle lemon lime soda
Directions:
- Steep tea bags in 2 cups of boiling water for 10 minutes.
- Meanwhile, place remaining 3 cups of boiling water in a 9×13 pan. Stir in sugar until dissolved.
- Stir in brandy, lemonade, and orange juice until combined.
- Remove tea bags and stir tea into brandy mixture.
- Freeze the mixture for 8 hours.
- To serve, scoop the desired amount into a glass and fill the glass with lemon lime soda and stir.
